Mini Chicken Pot Pie
Yesterday, I have a sudden craving for chicken pot pie. I crave for a delicious one, nothing less. I can taste the juicy and tender chicken with the perfect soft pastry melting in my mouth. Thank God the recipe Azie Kitchen: Mini Chicken Pot Pie isn't that difficult. The only ingredient I need to buy are chicken and fresh milk.
I know that this chicken pot pie is quite pricey. It can go up to RM2.50 each. (RM2.50 x 12 pieces = RM30). I bought half chicken around RM13.00 and 2 small size of fresh milk for RM2.50. Hey, I smell some kind of business opportunity!
Here comes my own pot pie recipe:
For 12 muffin cups serving
Ingredients:
1 tbsp vegetable oil
2 chicken breast or 1/2 chicken- minced
1 yellow onion (bawang Bombay)- minced
1/2 cup of chicken broth (air rebusan ayam)
1 potato- grated nicely
Celery leaves (daun sup)-chopped
Scallions (daun bawang)-chopped
2 red chillies (cili merah)
1/2 tsbp salt
1/4 tsbp black pepper AJI-SHIO
1 tsbp oregano
Chicken stock
Pastry ingredients:
1/2 cup Original Bisquick mix (recipe as below)
1/2 cup of fresh milk
2 eggs
Bisquick Mix
Ingredients:
1 cup of all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1 tbsp butter
Method (for pastry):
Sift (ayak) the flour with baking powder and salt well. Add butter to the mixture and stir well.
Mix all the pastry ingredients using electric hand mixer.
*Simmer (rebus) the minced chicken with chicken stock, bones and skins to make it tastier. Nyums.
Method (for chicken filling):
1. Heat the oven to 175C. Arrange and spray the muffin cups using cooking spray.
2. Heat the oil and add the onion. Cook until fragrance.
3. Add chicken and mix well. Add the chicken broth. Cook until boil.
4. Add all other ingredients and mix well. Finally, sprinkle the cheese on the mixture.
Method (for chicken pot pie):
1. Pour 1 tbsp pastry ingredients into muffin cup follow by 1/4 cup of chicken filling.
2. Top the filling with 1 tbsp pastry ingredients before bake.
